Ash plantains are the less sweet yet starchier version of bananas, which are an important staple for tropical countries’ inhabitants. The plantains are cooked prior to eating, unlike the dessert bananas. The ash plantains, when cooked, are similar to potatoes, both nutritionally and calorie-wise, but contain more minerals and vitamins. They also contain fiber, vitamins A, B6, and C, potassium, and magnesium.
